Chura Pulao is a very tasty and popular dish of Bihar. Chura also popularly known as Poha in other parts of country is basically flattened rice specially processed from paddy. It is widely available in India. Basmati Chura is more suitable for making Chura Pulao as it is very tasty; however other variety of Chura or Poha can be used.
Chura 250 Grams, Chopped Cauliflower 1 small pc, Chopped Carrots 1, Chopped beans 7-8, Chopped Onion 1, Chopped Capsicum 1 , Chopped green Chili 2pc, Coriander leaves, Peas 50gm, cooking oil, salt to taste, 1 teas spoonful powders each of turmeric, red chili, black pepper and garam masala.
Heat 3 table spoonful oil in a Kadai, add chopped onion and chopped green chili and sauté till it is light brown.
Add chopped cauliflower, beans, capsicum, carrot and peas, mix it well, also add salt to taste, powders of turmeric, red chili, black pepper and garam masala. Cover the vegetables and allow to cook for about 5 minutes on low flame.
Wash the Chura in a Pan and strain the water. Now add wet Chura to vegetables in Kadai and mix well, add some more salt as per your taste and cook for about 5 minutes. Add one spoon of pure ghee and remove the Kadai from stove.
The delicious Bihar dish Chura Pulao is ready to serve. You can garnish it with green coriander leaves and have it with tomato sauce or Dhaniya Chutney.
