Vegetables of all kinds are grown in Bihar as Bihar has a very fertile land. This is the reason Biharis are very fond of vegetables and cook them in different styles. As mustard is grown in abundance in Bihar, the Mustard seed oil is the most preferred medium of cooking in Bihar. Different kind of spices are used to make the vegetables tasty. Some times they are cooked with gravy and some times dry. In its dry form the vegetable is called "Bhujiya" and in curry form it is termed "Tarkari". It is customary to have vegetables with Rice during lunch and with Rotis during dinner. Some vegetables like brinjal, tomato, potato can be boiled or baked and mashed to make "Chokha" or "Bharta"after adding some spices, oil and salt.
